The KQ Single Serve Frittata is everything you want in an omelet, but with less of the hassle. You can put this together in 10 minutes and when its baking in the oven you can make a delicious keto coffee to go along with it. Keep in mind you can make this dairy free as well. Kick start your morning with this great breakfast. Enjoy!

Ingredients
 3 whole pasture raised eggs, beaten
 1 ½ tbsp heavy whipping cream (optional)
 ¼ beef steak tomato, small dice
 ¼ yellow onion, small dice
 ½ medium green bell pepper
 2 oz uncured bacon, chopped
 2 oz full-fat shredded mozzarella
 2 tbsp organic sour cream
 1 tsp sriracha
 1 stalk green onion, sliced
 Pink Himalayan sea salt to taste
 Freshly cracked black pepper

Preheat oven to 350 degrees.

In a medium saute pan over medium-high heat, sear off your chopped bacon.

Add your onion, bell pepper, tomato, and season with salt and pepper, Saute until translucent and place in a 4x4 ceramic baking dish. Add 1 oz of full-fat shredded mozzarella.

In a small bowl, crack your eggs and add your heavy cream. Beat the eggs and heavy cream with a whisk, until thoroughly combined, and pour over the vegetables and meat. Stir the mixture up leaving a little room at the top for the eggs to expand.

Place the ceramic dish in the oven for 20 to 25 minutes or until the middle no longer jiggles when shook.

Remove from oven, turn oven up to broil, and top the eggs with 1 oz full-fat shredded mozzarella. Place back in oven until cheese is golden brown.

Remove from oven and let cool for about 10 minutes before eating. Top with sour cream, sriracha, and green onion. Enjoy!
