This Mediterranean inspired cauliflower bowl is a great lunch or dinner that is easy to prepare ahead of time. In about 20 minutes, you can have a great meal and feel like you're on the coast of the Mediterranean sea! Zaa'tar may seem like an unfamiliar ingredient, however, it is just a seasoning commonly found in grocery stores.

Ingredients
 4 oz wild Atlantic salmon
 2 tbsp mild or spicy harissa
 8 oz riced cauliflower
 1 tbsp Zaa'tar seasoning
 2 tbsp extra-virgin olive oil
 2 tbsp T'zatziki
 2 oz feta goat cheese
 ½ cup Mediterranean salad
 Scallion, sliced to garnish (optional)
 Pink Himalayan salt to taste
 Freshly cracked pepper to taste

Directions

In a medium saute pan over medium-high heat allow to heat up and add 1 tbsp of olive oil. Season your salmon filet and place flesh side down first laying the fish away from you to avoid potential oil splatter. Sear the salmon until a nice golden brown crust develops then flip onto the skin side. Finish cooking on the skin side and set aside.

In the same pan, over medium-high heat, add another tablespoon of extra-virgin olive oil, the zaa'tar seasoning, and riced cauliflower. Toss or stir to combine and season with salt and pepper. Let cook for about 3 to 5 minutes in the pan.

In a small bowl, place your salmon and harissa inside and coat the fish thoroughly.

Plate your cauliflower in a bowl and add your t'zatziki and Mediterranean salad.

Top with your feta, scallions and enjoy!
