-Dry Ingredients
 2 tbsp coconut flour
 2 tbsp powdered erythritol
 1 tsp baking powder
 ¼ tsp xanthan gum
 1 tsp lime zest
 Pinch of oink Himalayan sea salt
-Wet Ingredients
 1 whole pasture raised egg, beaten
 1 tbsp coconut oil, melted
 ½ of a small lime, juiced
-Toppings
 2 oz full-fat cream cheese
 1 tbsp unsweetened coconut flakes
 Lime zest to garnish

combine all of your dry ingredients in a wide ramekin and mix thoroughly.

Beat the egg and add all of your wet ingredients to the dry ingredients and mix thoroughly.

Place in the microwave for 2 minutes 30 seconds depending on the strength of the microwave. Carefully remove from the microwave, as contents will be hot, and add your toppings! Enjoy!
