This isn't just keto cookies pulverized into a paste with a bunch of extra oils that are un-needed. The 'Keto Speculoos Cookie Butter' is simply almond butter with a festive seasoning blend and a few household items to amplify the flavor, without all the hassle. Remember to toast off your almond flour for added depth of flavor. The espresso grinds also help to mimic the cookie flavor. Enjoy!

Ingredients
 1 cup almond butter
 ¾ cup grass-fed salted butter
 ½ cup powdered sweetener (erythritol, stevia, monk fruit, allulose, or xylitol)
 ½ cup almond flour, toasted
 1 tsp vanilla extract
 2.50 g powdered sunflower lecithin
 ½ tsp espresso grinds
 Pink Himalayan sea salt to taste

Directions

in a medium saute pan over medium-high heat add your almond flour and toast. Let it develop a nice golden brown and toss occasionally to prevent burning and toast it evenly.

Add the almond flour to a small sauce pot and place the rest of your ingredients into the pot.

Place the small sauce pot over medium heat and allow to melt completely, whisking occasionally.
