Avocados are your best friend on keto, but we all know by themselves they can get pretty boring really quick. So let's spice it up and throw in tons of flavor by making this delicious guacamole! This is chef crafted guacamole better than what can be bought at the store!

Ingredients
 7 small hass avocados, halved and pitted
 ½ of a red onion, small diced
 ½ bunch cilantro, minced + leaves for garnish
 3 limes, halved and juiced
 2 jalapenos, small diced
 ¼ cup pumpkin seeds
 4 oz feta goat cheese
 4 oz uncured bacon, chopped
 ½ of a beefsteak tomato, small diced
 Pink Himalayan sea salt to taste
 Freshly cracked black pepper to taste

Directions

In a medium sauté pan over medium high heat cook your bacon until crisp, chop, and set aside.

Slice top off jalapenos, split down the middle with a knife and using a spoon remove seeds and ribs. Dice jalapenos, dice red onion and place in separate large bowl.

Cut limes in half and juice into a large bowl of onions and peppers. Allow to marinate, adding a small pinch of salt.

Cut avocados in half, pit and scoop out flesh with a spoon into the large bowl

Mince cilantro and throw into the bowl, season with salt and pepper to taste, and mix with a whisk or potato masher leaving some decent chunks apparent to the eye. Place guacamole in serving dish.

Dice tomato, chop bacon and layer feta, bacon, tomato, pumpkin seeds on top of guacamole and garnish with cilantro leaves.
