These Flaxjax are just like real pancakes! They're light, fluffy and won't leave you sluggish. Throw a pat of butter on top and some keto friendly syrup and you're set to have a great morning!

 ½ cup golden flax meal
 2 whole pasture raised eggs
 3 tbsp unsweetened vanilla coconut or almond milk
 ½ tsp cinnamon
 ½ tsp baking powder
 1 ½ tbsp powdered sweetener (erythritol, stevia, allulose, or xylitol)
 ½ tsp vanilla extract
  tsp pink Himalayan sea salt

Combine all ingredients in mixing bowl and whisk thoroughly until smooth. Let stand at room temperature for 10 minutes to activate baking powder and thicken batter.

Heat griddle over medium heat and with a 1/3 cup scoop batter on to griddle making 1 to 2 pancakes. Cook for 5 minutes until bubbles appear and begin to pop. Flip for another 3 to 5 minutes, slather with butter and enjoy.
