The Cobb salad is a keto staple and is an easy find in most restaurants allowing you the freedom to go out with family and friends! You can make this Chicken Cobb Salad at home! It's super easy to make and perfect for meal prep. This Chicken Cobb Salad recipe is fresh, delicious, and light on the stomach.

 4 oz boneless skinless chicken thigh
 2 cups spring mix salad
 1 whole pasture raised egg, hard boiled
 ½ small hass avocado, sliced
 6 cherry tomatoes, halved
 2 oz uncured bacon, chopped
 1 tbsp pumpkin seeds
 1 oz full-fat shredded sharp cheddar cheese
 5 kalamata olives, sliced
 2 tbsp dressing of choice
 Pink Himalayan sea salt to taste
 Freshly cracked black pepper to taste

Place your pasture raised egg in a small pot covered with cold heavily salted water over high heat and bring to a boil.

Once boiling, remove from heat, cover with lid, and let stand for 10 minutes. Shock the egg in ice bath to prevent overcooking and stop the cooking process. Peel the egg and slice.

Season chicken with salt and pepper and let rest while pan heats over medium high heat.

Sear chicken for 6 minutes on each side. Let rest 4 to 5 minutes before slicing or chopping.

Place spring mix in the bottom of a bowl and layer all ingredients as desired and enjoy!
