Ingredients
 2 cups riced cauliflower
 1 whole pasture raised egg
 4 oz chicken thigh, chopped small or sliced thin
 2 tbsp salted grass-fed butter
 1 tsp sesame seeds
 1 tsp sesame oil (optional)
 1 tbsp tamari or coconut aminos
 2 tbsp frozen carrots
 2 tbsp broccoli rice
 1 Garlic clove, minced
 Pink Himalayan sea salt to taste
 Freshly cracked black pepper to taste

Directions

In a large skillet over medium-high heat, add butter and sear off your chopped chicken thigh. Set aside.

In the same pan, melt 1 tbsp of butter. Add carrots and cook for 3 minutes.

In the same pan, melt another tbsp of butter. Add the broccoli, garlic, and riced cauliflower to pan and cook for 8 minutes.

Crack egg on top of riced cauliflower and quickly stir everything together until combined.

Add tamari or coconut aminos and sesame oil and combine well. Season with salt and pepper to taste. Place in bowl and top with sesame seeds. Enjoy!
