Wait, don't throw out those rinds! Parmesan rinds are sadly under used and under valued. Most people are unaware of the incredible flavors Parmesan rinds can lend to soups, bolognese, cream-based sauces, and braises. In fact, they're so obscure, I bet you didn't know you could make your own cheese crisps aka 'Cheesy Poofs'. Not only is it cheaper than buying a bag at the store, it can be done in under 3 minutes! Ingredients
 8 oz Parmesan rind
 Maldon salt to taste

Place a small cutting board on top of a wet towel. Using a sharp knife, cut your Parmesan rinds into equally sized cubes.

On a microwave safe plate, arrange your cubes so there's equal spacing between each one because they will expand a little bit.

Place in microwave, for 30 seconds to 1 minute and 30 seconds depending on the strength of your microwave. You should be able to see them expanding and popping but once the popping has calmed down that's when they're done.

Remove from microwave and immediately salt them and let them cool completely so they get crunchy, about 5 minutes. Enjoy!
