Brussel sprouts are the most under utilized fibrous vegetable on the keto diet. Using these ingredients, allows them to shine and soak up the falvors it is cooked in. These brussel sprouts are so easy to make and really cover all the needs and tastes on a keto diet. Make sure to toast off the pumpkin seeds in the bacon fat before adding the brussel sprouts. Enjoy!

 4 oz uncured bacon
 2 tbsp pumpkin seeds
 2 tbsp shallot, minced
 2 tbsp salted grass-fed butter (optional)
 10 oz brussel sprouts, shaved
 1 tbsp freshly squeezed lemon juice
 2 oz freshly grated Parmesan cheese
 Pink Himalayan sea salt to taste
 Freshly cracked pepper to taste
 Freshly grated lemon zest

In a large sauté over medium-high heat begin rendering out your chopped bacon.

Add your minced shallot and saute for an additional 30 seconds.

Toss in your pumpkin seeds and fry them in the bacon fat for about 2 minutes.

Melt 2 tbsp of butte (optional)r in pan, add your brussel sprouts and let cook until brown and crisp on one side then toss and finish on the other side.

Remove from heat and plate your Bacon Bits and Brussels and squeeze lemon juice over the top.

Top with Parmesan cheese, freshly grated lemon zest and enjoy!
